Cuverie è the French term to indicate the ' wine cellar 'where the grapes harvested in the vineyard are brought, where the miracle of fermentation takes place, completing the
fundamental process started in ul teroir.We wanted to convey the perfect union between the work that takes place
in the vineyard and the next one in the cellar.Cuverie was born from an idea of Monica Garbini & Marco Tullio Botti wife and husband respectively with the collaboration of his friend and chef PAOLO BORGESE who has worked in the best restaurants and hotels in Rome and
who has decided to make available his professionalism and creativity in this project. 20 years in the Roman restaurant with her family who for over 80 years has been the owner of the RISTORANTE ANTONIO AL PANTHEON with origins from Accumoli, she graduated as a sommelier in 2019 at the FIS and wanted to undertake this new path precisely following what she has discovered with the course
because as the professors say in the first lesson 'this course will change your life '. Marco, a great lover and connoisseur of cured meats and cheeses, wanted to put his experience into this adventure.
CUVERIE was born from the idea of wanting to convey all the dedication, passion, commitment and meticulous care of those who decided to
' create 'wine. Wine is poetry, a feeling of transport, different emotions in every single one harvest
and in every single terroir. And it is right in front of a bottle of wine that we like to think we can compare our thoughts, the ties to our origins in order to relate to each other because every single vine is the fruit of our relationship with the territory in which we were born and raised that represents us
and that can tell us so many stories. With the same principle we want to propose also from the gastronomic point of view as many products chosen and selected by us by small artisans.
